Apricot Glazed Brussel Sprouts

Ingredients

1 pkg (500 g) Green Giant* VALLEY SELECTIONS* Frozen Brussels Sprouts
1/4 cup (50 mL) reduced sugar apricot spread
1 1/2 tsp (7 mL) chopped fresh dill (or 1/2 tsp/ 2 mL dried)
1 1/2 tsp (7 mL) lemon juice
1/2 can (125 mL) sliced, water chestnuts, drained
2 tbsp (25 mL) unsalted cashews or almonds, toasted

Instructions

  • 1 Cook Brussels Sprouts according to package directions; drain well.
  • 2 Meanwhile, in a small saucepan combine remaining ingredients except cashews. Cook over low heat 5 minutes or until heated through. Stir occasionally.
  • 3 Pour over Brussels Sprouts; stir gently to coat.
  • 4 Sprinkle with cashews.

Tip: Try adding chopped cooked bacon to this dish for a wonderfully smoky flavour variation.
