Crescent Spinach & Cheese Bake

Ingredients

  • 1/4 cup (50 mL) finely chopped onion
  • 1/8 tsp (0.5 mL) garlic powder OR 1 clove garlic crushed
  • 2 tbsp (25 mL) oil
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1 pkg (300 g) frozen chopped spinach, thawed, well drained
  • 1 2/3 cups (400 mL) mozzarella cheese
  • 1/2 cup (125 mL) cooked rice
  • 1/3 cup (75 mL) grated Parmesan cheese
  • 2 eggs, beaten
  • 1 tbsp (15 mL) milk
  • 1 can (235 g) Pillsbury* Crescent Rolls

    Heat oven to 350°F (180°C).

    Grease 9 inch (23 cm) glass pie pan or quiche dish.

    Cook onion and garlic in oil until tender. Add salt and pepper; remove from heat. Combine spinach, 1 cup (250 mL) mozzarella cheese, rice, 1/4 cup (50 mL) Parmesan cheese, eggs and milk; stir in onion mixture.

    Separate dough into 8 triangles. Place 1/2 cup (125 mL) spinach mixture at the shortest side of each triangle. Roll up; gently wrapping dough around spinach mixture and rolling to opposite point. Arrange rolls point side down in prepared pan. Sprinkle with remaining 2/3 cup (150 mL) mozzarella cheese and 1 tbsp (15 mL) Parmesan cheese.

    Bake for 25 to 30 min or until cheese is melted and rolls are golden brown. (Centre should be firm not runny).

    Tip: Try substituting wonderfully tangy feta cheese in place of mozzarella for a twist on the traditional Greek dish, spanokopita.
