Warm Chicken & Corn Salad

Ingredients

1 tbsp (15 mL) canola oil
1 lb (500 g) skinless, boneless chicken breasts, cut into thin strips
2 medium carrots, cut into very thin strips
1 1/2 cups (375 mL) Green Giant* Frozen Niblets Whole Kernel or Peaches and Cream Corn
2 green onions, thinly sliced
4 tsp (20 mL) lemon juice
2 tsp (10 mL) soy sauce
1 tsp (5 mL) grated ginger root or 1/2 tsp (2 mL) ground ginger
1/2 tsp (2 mL) dry mustard
4 cups (1 L) torn romaine leaves

Instructions

  • 1 In a large non-stick skillet, heat oil over medium-high heat. Cook and stir chicken until no longer pink. Add carrots and cook 2 to 3 minutes longer, stirring frequently. Stir in remaining ingredients, except lettuce, and heat through.
  • 2 Divide lettuce among serving plates. Top with warm chicken mixture. Serve immediately.

Expert Tips

Tip: Substitution: Canned Green Giant* Niblets* Whole Kernel Corn or Peaches and Cream Whole Kernel Corn can be used. Drain before using.Try using pork tenderloin instead of chicken.
