Baked Ham and Egg Cups

I spent a week working for a friend's husband in Alberta, and said friend introduced me to some of her favorite family recipes while I was there. On the Saturday morning I woke up to the most DELICIOUS aroma emitting from her oven. She made us ham and egg cups, topped with peppers, salsa and cheese and they were AMAZING. I dipped them in hot sauce and it was like there was a party in my mouth.

I couldn't wait to make them for my family, so that's what I did last weekend. Trust me, you need to make these.

Ingredients

Slices of deli ham (She used maple, I used honey, any kind will work)
Eggs (2 per cup)
Chopped peppers
Chopped green onions
Old El Paso salsa Shredded cheese

(All ingredients are optional. My kids don't like spicy foods, so I made two with just ham, eggs, and cheese.)

Directions

Place ham into a muffin tin so that it lines it like a cupcake liner. Crack two eggs and put them inside. Break yolk with a fork.

Place your desire toppings (except for the cheese).

Bake at 375 for 15 minutes. Remove from oven and sprinkle with cheese.

Bake for another 5-10 minutes, depending on how hard or soft you like your eggs.

Serve with salsa or hot sauce and try to stop at just one.
