Easy Slow Cooker Pot Roast

Between work and school and activities for our family of five, our days can be pretty jammed. On the days when we're going to be on the go from breakfast until dinner, I like to use my crock pot to ensure that we have a healthy (and tasty) dinner for us to dive into. One of my favorite -- and easiest -- recipes is the one I use for pot roast.

INGREDIENTS:  

1 roast, cut of your choice

3 carrots, chopped

4 potatoes, chopped into chunks

1 can beef broth

1 beer (or another can of water if beer's not a flavor you like)

1 can of onion soup

DIRECTIONS:

Place roast in slow cooker and surround with carrots and potatoes. Pour in beef broth, beer/water, then dump the onion soup on top of the roast. Cover and cook for seven hours on low, or four hours on high. Serve with the condiments of your choice (I like mustard, my husband likes barbecue sauce and our kids like ketchup).
