I love quesadillas, but my regular recipe found me bored. Meat, cheese, tortilla. That's it. I thought that I'd create a sauce to include in the quesadilla and all of a sudden, they went from okay to AMAZING. Serve with salsa, sour cream, and guacamole, of course.
1/4 cup mayonnaise
2 tsp minced jalapenos
1/2 tsp sugar
1/2 tsp cumin
1/8 tsp cayenne pepper
1/2 tsp crushed garlic
salt, to taste
Chicken breasts, sliced and chopped
2 Tbsp olive oil
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
Stir sauce ingredients together, and set aside.
Sautee chicken breast pieces in olive oil until browned and cooked. Remove from heat.
Spoon sauce onto one half of the tortilla. Place cooked chicken on the other half of the tortilla, and sprinkle with the cheese(s) of your choice.
Grill in a non-stick pan until the tortillas are browned and the cheese is melted.
