Coconut, banana chips, fruit flavours and macadamia nuts add a tropical treat to this island mix.

Ingredients

  • 5 cups Blueberry Chex™ cereal
  • 2 tablespoons butter
  • 2 tablespoons packed brown sugar
  • 1 tablespoon frozen (thawed) orange juice concentrate
  • 1/2 cup shredded coconut
  • 1/2 cup dried banana chips
  • 2/3 cup dried tropical fruit mixture (chopped if necessary)
  • 1/3 cup macadamia nuts or cashews

    In large microwavable bowl, place cereal.

    In 1-cup microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and orange juice concentrate. Microwave uncovered on High about 30 seconds or until hot; stir. Pour over cereal mixture, stirring until evenly coated.

    Microwave uncovered on High 3 minutes, stirring well every 1 minute. Stir in coconut, banana chips, tropical fruit and nuts until well mixed. Spread on cooking parchment paper or waxed paper; cool 15 minutes. Store in airtight container.

    For the tropical dried fruit mixture, we purchased dried mango, pineapple and papaya and chopped it up. Any premade blend with tropical fruit would work well.
