Chicken and Steak Fajitas

While we barbecue all year 'round -- we're Canadian, after all -- we definitely have more grilled dinners as the weather starts heating up. If you know me at all, then you know that I like any Mexican-themed meal and have been known to put salsa on almost everything, including eggs. One grilling recipe that I've (shockingly) never shared here is one that has been a favourite around our house for many, many years. It's an easy and delicious marinade that works on both chicken and steak. The recipe calls for marinading the meat the day before you grill it, but you can make it the same day and marinade it for a few hours before you grill it. It will still be amazing, just not AMAZING.

Ingredients:

2/3 cup water
1/3 cup soya sauce
2 Tbsp Worstershire sauce
2/3 cup honey
1/4 tsp minced ginger
1/2 tsp minced garlic
2 chicken breasts
2 steaks

(This recipe is easily doubled if you're serving more than five people.)

Directions:

 

Mix the marinade ingredients in a bowl. Add the chicken and steak and let marinate overnight. You can also double the recipe and freeze half of the marinade and meat for a future meal.

When you put the meat on the grill, slice up an onion and a couple of peppers. Saute them until they are tender. After the chicken is cooked, slice it into strips. Serve with sour cream, salsa, grated cheese, guacamole, and whatever else strikes your fancy.

Put everything into your tortilla and wrap them up. If you're living gluten-free, just put all of the fillings on a salad. It tastes great, any way you serve it.
