I got this recipe from my friend Karen and it's one of my favorite fall recipes.
INGREDIENTS
2 boneless chicken breasts cooked and chopped
1/2 cup chopped onion
1/2 cup chopped celery
2 Tbsp butter
2 Tbsp flour 4 cans (4 1/2 cups) of chicken broth
1 tin corn
1 tin creamed corn
1 tin cream of chicken (or anything) soup
3-4 potatoes, chopped
3 carrots, chopped
DIRECTIONS
Cook 1/2 cup chopped onion, and 1/2 cup chopped celery in 2 Tbsp butter. Add 2 Tbsp flour to mixture when veggies are soft. Add mixture to chicken broth.
Bring 4 cans (4 1/2 cups) of chicken broth with veggie mixture to a boil.
Add chicken breasts, carrots and and 3-4 potatoes soup.
Simmer 10 min.
Heat it through, and serve with grated cheese and cornbread. Enjoy!
