Easy Taco Casserole

I found the Fiesta Taco Casserole recipe in the Betty Crocker Big Red Cookbook

I found the Fiesta Taco Casserole recipe in the Betty Crocker Big Red Cookbook (http://www.bettycrocker.com/cookbooks-and-magazines/betty-crocker-cookbook) and modified it a bit. It was a hit with my husband and my kids and of course, me. I love anything Mexican-flavoured. 

INGREDIENTS: 
1 lb lean ground beef

1 package Old El Paso taco seasoning

1 can kidney beans

1 cup chunky-style salsa

4 green onions, sliced (1/4 cup)
2 tomatoes, chopped

1 cup shredded cheese (we used cheddar)
Tortilla chips, shredded lettuce, salsa, sour cream, any other sides you like

DIRECTIONS 

Heat oven to 350F. In  skillet, cook beef over medium heat until brown. Add taco seasoning, kidney beans and 1 cup of salsa. Heat to boiling, stirring occasionally. 
Place beef mixture in an ungreased casserole dish. Sprinkle with onions, tomatoes and cheese. 

Bake uncovered for 20 to 30 minutes until hot and bubbly. Arrange tortilla chips around the edge of the casserole and serve extras for scooping. Serve additional sides.
