Green Beans With Honey Mustard Vinaigrette

My husband is an avid gardener and loves to grow both flowers and plants. He is at his happiest when he is outside and he spends a lot of time out there pruning, weeding, fertilizing, and harvesting. I do not have a green thumb (Which is why we have no houseplants. None.), but I love to cook with what he grows in the garden.

Our green beans are starting to ripen and while there aren't enough to can (yet), I wanted to have some with dinner the other night. I made a vinaigrette, sliced up some red onions (also from our garden), steamed the beans and was pleasantly surprised. My kids even like them. Hooray!

Vinaigrette Ingredients:

1 Tbsp honey
2 Tbsp Dijon mustard
4 Tbsp white wine, or white wine vinegar
2 Tbsp Olive oil
pinch of each salt and pepper

Directions:

Mix together and set aside.

Other ingredients:

1 pound of green beans
1 medium red onion
1 Tbsp of coarse salt (optional)

Directions:

Slice red onion and set aside. Steam green (or yellow) beans in boiling, salted water for approximately four minutes, or until tender but still crispy. Drain. Toss with vinaigrette and red onions, and sprinkle with coarse salt. Serve and enjoy!
