Grilled Salmon With Lemon

I am a huge fan of both seafood and the grill, and I love how they come together to make a great summer meal.

My husband is an avid outdoorsman and that includes a love of fishing. He'll go out with his brother and come back with a bunch of trout or salmon. I am a huge fan of both seafood and the grill, and I love how they come together to make a great summer meal.

INGREDIENTS

1 filet of salmon, skin on, scored into serving pieces

5 tablespoons olive oil

4 garlic cloves, minced

1/4 cup minced fresh (or dried) dill

2 teaspoons salt

1 teaspoon ground black pepper

1 teaspoon lemon zest, plus lemon wedges for serving

DIRECTIONS

Mix oil, garlic, dill, salt, pepper and lemon zest; brush over salmon to coat.

Grill covered until salmon is opaque throughout (130 on a meat thermometer), 20 minutes or longer, depending on thickness and grill temperature.

Let sit 5 minutes; serve with lemon wedges.
