It's National Piña Colada Day! Did you know that? I didn't, either, until the powers that be who run this site told me that it was the case.

I will confess that I don't normally order a Piña Colada when out for dinner. This has nothing to do with the drink itself, but I've had mediocre experiences when ordering one. A good friend's husband is a huge fan -- despite it being a "girly" drink -- so I've played with the recipe over the years to make something that I'd enjoy as well when they're here for dinner.

I whipped up a batch for the purpose of writing this post and let my three kids do a taste test before I added the rum. The drink got six thumbs up, which is a good sign for those who prefer a mocktail.

INGREDIENTS:

3/4 cup pineapple juice
2/3 cup coconut milk
1/3 cup whipping cream
2 cups crushed ice
1/2 lemon, for squeezing
1/3 cup white rum
1/3 cup dark rum

DIRECTIONS:

Place the first four ingredients in blender and add crushed ice. Blend until smooth. Squeeze the lemon juice in and blend to mix.

Add rum for the adults who want it and blend again. Pour into a glass and garnish with a slice of pineapple.The straw is optional, but preferred.
