In keeping with my theme of loving Mexican-flavoured meals and side dishes, I love avocados and guacamole. I am a huge fan of making lettuce wraps for lunch and they almost always have diced avocado in them. if I'm making nachos or fajitas or any other such meal, I always make guacamole. Always. It's been getting a bit more kick to it lately, and thought I'd share it with you lovely folks.
3 Tbsp sour cream
2 tsp cumin
3 tsp Old El Paso sliced jalapenos, chopped
3 tsp sun dried tomatoes, chopped
1 tsp salt
1/2 lime, squeezed or tsp lemon juice
Mash avocados and sour cream with a fork in a small bowl. Add the rest of the ingredients and blend well. Try not to eat the entire bowl in one sitting.
