Ingredients

2 cups chopped cooked chicken
1 can (14 oz/ 398 mL) fire roasted diced tomatoes, undrained
1 can (127 mL) Old El Paso™ chopped green chilies
1/2 cup chopped green onions
1 package Old El Paso™ chicken taco seasoning mix
1/4 teaspoon ground red pepper (cayenne), if desired
1 package (450 g) Kraft™ Velveeta™ original prepared cheese product, cut in 1/2-inch cubes
2 tablespoons chopped fresh cilantro leaves
Tortilla chips, as desired

    Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix chicken, tomatoes, chilies, green onions, taco seasoning mix and red pepper.

    Top chicken mixture with Velveeta™ cheese; do not stir. Cover; cook on Low heat setting 2 1/2 to 3 1/2 hours or until cheese melts and mixture is hot (at least 165°F in centre).

    Stir.

    Top with cilantro. Serve with tortilla chips.

Expert Tips

  • Placing the cheese on top of the chicken mixture keeps the chicken moist and also keeps the cheese from burning if it touches any hot spots in the slow cooker.
  • If you’d like keep the dip in the slow cooker on Warm setting for your party, stir cilantro into the dip instead of sprinkling over the top.
