Cookies for breakfast? It’s just like you’ve always dreamed! Secretly healthy, and not-so-secretly delicious, these make-ahead breakfast cookies get a boost of protein thanks to hearty quinoa. And all that chocolate is definitely worth getting out of bed for. (You might even become a morning person.) Recipe by Cheeky Kitchen.

Ingredients

  • 1/2 cup coconut oil, softened
  • 1 tablespoon vanilla
  • 1 tablespoon vanilla
  • 1 egg
  • 1 3/4 cups Original Bisquick™ mix
  • 1 cup cooked quinoa
  • 1/4 cup shredded coconut
  • 1/4 cup chopped pecans, walnuts or sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup M&M’s™ dark chocolate candies

Steps

  • 1
    Heat oven to 350°F. In a stand mixer, beat together coconut oil, sugar, vanilla and egg. Add Bisquick™ and mix until combined.

    Stir in quinoa, coconut, nuts, cranberries and M&M’s™.

    Scoop onto a parchment-lined baking sheet.

    Bake 8 to 10 minutes, or until cookies set.

    Start the morning off right with plant-based protein, baked into tasty Trail Mix cookies. Cooked quinoa gives these cookies a hearty texture. Coconut sugar sweetens the mix. Add coconut, nuts, cranberries or cherries, and dark chocolate candies. Or stir in other favourite trail mix toppings. Dried blueberries, raisins, granola or sliced almonds all make great add-ins, as well. A scoop of protein powder would also pair well.
