You can never have enough marshmallows! These oven-baked goodies have marshmallow bits right in the cookie, plus a big gooey marshmallow on top. Drizzle with chocolate and top any way you like.

  • 1 pkg (12 count) Pillsbury™ Marshmallow Ready-To-Bake™ Cookies
  • 12 large marshmallows
  • 3/4 cup semisweet chocolate chips
  • 1½ tsp butter
  • Toppings such as, your favourite cereal, graham cracker crumbs, candy sprinkles

    Heat oven to 350°F. Place cookie dough rounds 2-inches apart on a greased cookie sheet. Bake for 15 minutes or until just starting to turn golden around edges. Immediately place one large marshmallow on top of each cookie. Return to oven and bake 3 minutes longer until marshmallow is soft and puffed. Remove from oven and lightly press each marshmallow to flatten. Cool.

    Place chocolate chips and butter in a small microwaveable bowl. Microwave on 50% power for 40 seconds; stir. Continue microwaving in 10 second increments, stirring after each until chocolate is melted and smooth. Drizzle over cookies and decorate as desired using graham cracker crumbs, cereal or candy sprinkles.

Expert Tips

  • Tip 1
    Make drizzling easy by placing a medium food storage freezer bag inside a mug with the bag opening hanging over the rim. Spoon melted chocolate into the bag. Remove bag from the mug and seal. Cut a small hole in one corner of the bag and squeeze to drizzle.
  • Tip 2
    If you’re in a hurry, skip the drizzling step and just sprinkle the warm marshmallows with chocolate chips as soon as they come out of the oven.
