4 cups (1 L) Oatmeal Crisp* Almond Cereal
1/3 cup (75 mL) sliced almonds
1 tbsp (15 mL) chopped crystallized ginger
7 oz (189 g) dried tropical three-fruit mix
1/4 cup (50 mL) packed brown sugar
1/2 tsp (2 mL) ground ginger
2 tbsp (25 mL) margarine
1/4 cup (50 mL) coconut

    Heat oven to 300ºF. In large bowl, mix cereal, almonds, crystallized ginger and dried fruit.

    In 1-quart saucepan, heat brown sugar, ground ginger and margarine over low heat, stirring occasionally, until spread is melted; stir in coconut. Pour sugar mixture over cereal mixture; toss until evenly coated. Spread in ungreased 15x10x1-inch pan.

    Bake 15 minutes, stirring twice. Cool 5 minutes. Store in tightly covered container.

  • Do-Ahead: Fill a half-dozen snack bags with 1/2-cup amounts of this snack mix, and stash close to the door. It's the perfect treat to take anywhere!
  • Health Twist: Almonds supply omega-3 fatty acids that may help reduce the risk of heart disease. They're loaded with unsaturated fats, so don't go nuts with your portions.
