Everyone loves homemade lemon squares! These refreshing sweet and lightly tart lemon squares are Betty's Best.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup (125 mL) butter or margarine, softened
  • 1/4 cup (50 mL) icing sugar
  • 1 cup (250 mL) granulated sugar
  • 2 teaspoons (10 mL) grated lemon peel, if desired
  • 2 tablespoons (30 mL) lemon juice
  • 1/2 teaspoon (2 mL) baking powder
  • 1/4 teaspoon (1 mL) salt
  • 2 eggs
  • Icing sugar

Steps

    Heat oven to 350ºF (180°C).

    Mix flour, butter and icing sugar. Press in ungreased 8 or 9 inch (20 or 23 cm) square pan, building up 1/2-inch (1.3 cm) edges.

    Bake crust 20 minutes.

    Beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.

    Bake 25 to 30 minutes or until no indentation remains when touched lightly in centre. Cool; dust with icing sugar. Cut into about 1 1/2-inch (3.5 cm) squares.

    Did You Know? Grate only the yellow portion of the lemon; the white portion, or pith, is very bitter.

    Substitution: Rise to the occasion! Self-rising flour can be used in this recipe. (Do not omit baking powder and salt.)

    How-To: For a bright lemon colour, add 4 to 6 drops of yellow food colour with the eggs and sugar mixture.

    Variation: Make Lemon-Coconut Squares: Stir 1/2 cup (125 mL) flaked coconut into egg mixture in step 2.
