Ingredients

  • 2 packages (250 g each) Kraft™ Velveeta™ original cheese, cut into 1/2-inch cubes
  • 6 oz beer (from 12-oz bottle)
  • 1 can (127 mL) Old El Paso™ chopped green chilies
  • 2 cloves garlic, finely chopped
  • 1 tablespoon Old El Paso™ taco seasoning mix (from 28 g package)
  • 1 container (250 mL) sour cream (1 cup)
  • 1/4 cup diced tomato
  • 2 tablespoons chopped fresh cilantro leaves
  • Tortilla chips for dipping, as desired

Steps

  • 1
In 2-quart microwavable bowl, mix cheese, beer, green chilies, garlic and taco seasoning mix. Microwave uncovered on High 3 minutes; stir, then microwave 3 to 5 minutes longer or until mixture can be stirred smooth.
  • 2
Stir in sour cream, and top with diced tomato and cilantro. Serve with chips.

  • We preferred the flavour of an amber lager for this recipe, but any Pilsner or lager will work.
  • Opt for Roma tomatoes when purchasing fresh tomatoes in winter and spring. During the off season, they tend to be riper and less mealy than other varieties.
