With that classic coffee cake flavour and as much sweet streusel on top as there is below, these buttery cinnamon coffee cake minis are the stuff brunch dreams are made of. Recipe by Cheeky Kitchen.

  • 2 cups Original Bisquick™
  • 2/3 cup milk
  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 1 egg

  • 1 cup brown sugar
  • 1/2 cup Original Bisquick™
  • 4 tablespoons softened butter
  • 1 tablespoon cinnamon

  • 3/4 cup icing sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

    Heat oven to 400°F. Line a 12-cup muffin tin with parchment liners.

    In a large bowl, stir together Bisquick™, milk, brown sugar, melted butter and egg called for in muffin ingredients.

    In a second bowl, mix together the brown sugar, Bisquick™, softened butter and cinnamon to form the streusel crumbles.

    Spoon 1 tablespoon of batter into the bottom of each muffin cup, followed by 1 tablespoon of streusel crumbles. Top cups with remaining batter, filling each cup evenly. Spoon remaining streusel on top.

    Bake 18 to 20 minutes, or just until the centre of each muffin is set.

    In a small bowl, mix together icing sugar, milk and vanilla. Drizzle over the top of warm coffee cakes.
