  • 1
Heat oven to 400°F. Line a 12-cup muffin tin with parchment liners.
  • 2
In a large bowl, stir together Bisquick™, milk, brown sugar, melted butter and egg called for in muffin ingredients.
  • 3
In a second bowl, mix together the brown sugar, Bisquick™, softened butter and cinnamon to form the streusel crumbles.
  • 4
Spoon 1 tablespoon of batter into the bottom of each muffin cup, followed by 1 tablespoon of streusel crumbles. Top cups with remaining batter, filling each cup evenly. Spoon remaining streusel on top.
  • 5
Bake 18 to 20 minutes, or just until the centre of each muffin is set.
  • 6
In a small bowl, mix together icing sugar, milk and vanilla. Drizzle over the top of warm coffee cakes.

Expert Tips

  • Coffee cake is a brunch and breakfast classic. But sometimes you don’t have time to prep and bake a whole cake. The guests are coming! The coffee is on drip! What’s a party host to do? Whip up these easy little coffee cake minis, we say.
  • Serve with giant mugs of coffee, of course. Pair with sliced oranges and fresh berries. A side of sausage rounds out the flavours nicely, as well.
