2 cans (19 oz/540 mL) cannellini beans (white kidney beans), rinsed and drained
1 large tomato, seeded and coarsely chopped (about 1 cup/250 mL))
1 small red bell pepper, chopped (about 1/2 cup/125 mL)
1/2 cup (125 mL) chopped red onion
1/4 cup (50 mL) chopped fresh parsley
1/4 cup (50 mL) olive or vegetable oil
2 tbsp (25 mL) choppd fresh or 2 tsp (10 mL) dried basil leaves
2 tbsp (25 mL) red wine vinegar
1/2 tsp (2 mL) salt
1/8 tsp (0.5 mL) pepper
12 lettuce leaves

    In large glass or plastic bowl, carefully mix all ingredients except lettuce.

    Cover and refrigerate at least 2 hours to blend flavours. Just before serving, spoon onto lettuce, using slotted spoon.
