Ingredients

  • 3 tbsp (45 mL) fresh lemon juice
  • 1 tbsp (15 mL) chopped fresh or 1 tsp (5 mL) dried oregano leaves
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) sugar
  • 1/2 tsp (2 mL) Dijon mustard
  • 1/4 tsp (1 mL) pepper
  • 1 clove garlic, finely chopped
  • 1 bag ready-to-eat romaine lettuce
  • 3/4 cup (175 mL) chopped seeded peeled cucumber
  • 1/2 cup (125 mL) sliced red onion
  • 1/4 cup (50 mL) sliced Kalamata olives
  • 2 medium tomatoes, seeded, chopped (about 1 1/2 cups/375 mL)
  • 1/4 cup (50 mL) reduced-fat feta cheese

    In small bowl, beat all dressing ingredients with wire whisk.

    In large bowl, toss all salad ingredients except cheese. Stir in dressing until salad is well coated. Sprinkle with cheese.
