Pumpkin Hand Pies

Ingredients

  • 1 package Pillsbury Pie Crust
  • 1/2 cup pumpkin puree
  • 2 tablespoons brown sugar
  • 1/4 to 1/2 teaspoon pumpkin pie spice
  • 1 egg

    Pre-heat oven to 350°F. Line a baking sheet with parchment paper and set aside.

    On a lightly floured surface, unroll one piece of pie dough. Use a pumpkin-shaped cookie cutter to cut out pieces of dough and set aside. Gather the remaining dough and press it together. Roll out the leftover dough to about 1/8-inch thick and continue cutting out pumpkins. Repeat with the second piece of pie dough.

    Place half of the pumpkins on a cutting board and set aside. These will be the bottoms of the hand pies.

    With the top half, decorate the pumpkins and Jack-o-lanterns. Use a paring knife to gently score pumpkins or cut out eyes/mouths for the Jack-o-lanterns. Use a touch of water to place cut-outs on top of the pumpkins to make a face, if desired.

    In a small mixing bowl, stir together the pumpkin puree, brown sugar, and pumpkin pie spice. Place 1 to 1 1/2 tablespoons of pumpkin pie filling in the center of each of the plain (bottom) pumpkins. Gently spread with the back of a spoon, leaving a 1/2-inch border around each edge.

    Using a clean finger or pastry brush, gently wet with water and dab around the edges of half of the filled pumpkins. Place half of the decorative pumpkins on top of the filling and gently press to close. Use the tines of a fork to seal the edges. Repeat with the remaining pumpkins.

    In a small bowl, whisk the egg with a splash of water to create an egg wash and set aside. Transfer all of the pumpkins to the lined baking sheets. Brush the pumpkins with the egg wash. Bake in the pre-heated oven for 14 to 18 minutes or until golden brown. Remove from the oven and place the baking sheet on a wire cooling rack. Allow pumpkins to cool for at least 10 minutes before serving.
