Ingredients

Crust  
1 pouch (496 g) Betty Crocker* Sugar Cookie Mix
1/4 cup (50 mL) butter or margarine , melted
1 egg  
Filling  
4 eggs
2 cups (500 mL) granulated sugar
1/4 cup (50 mL) all-purpose flour
1 tsp (5 mL) baking powder
1 tsp (5 mL) grated lemon peel
1/4 cup (50 mL) lemon juice
Topping  
2 tbsp (25 mL) icing sugar

    Heat oven to 350°F (180°C). In large bowl, stir together crust ingredients.

    <p>In bottom of ungreased 9x13-inch (22x33 cm) pan, press mixture evenly. Bake 18 to 22 minutes or until light golden brown.</p>

    Meanwhile, in same large bowl, stir together filling ingredients except lemon juice. Stir in lemon juice. Pour mixture over warm crust.

    <p>Bake 23 to 28 minutes longer or until top is light golden brown.</p>

    Cool completely, about 1 hour. Sprinkle with icing sugar.

    For bars, cut into 6 rows by 6 rows.

Expert Tips

  • Tip: After dusting with icing sugar, sprinkle with a little colored sugar for a festive touch or sprinkle with toasted flaked coconut.
