Sunny Lemon Bars

Just the right balance between tart and sweet, these pretty little bars make everyone smile!

Ingredients

  • Crust  
  • 1 pouch (496 g) Betty Crocker* Sugar Cookie Mix
  • 1/4 cup (50 mL) butter or margarine , melted
  • 1 egg  
  • Filling  
  • 4 eggs
  • 2 cups (500 mL) granulated sugar
  • 1/4 cup (50 mL) all-purpose flour
  • 1 tsp (5 mL) baking powder
  • 1 tsp (5 mL) grated lemon peel
  • 1/4 cup (50 mL) lemon juice
  • Topping  
  • 2 tbsp (25 mL) icing sugar

Steps

    Heat oven to 350°F (180°C). In large bowl, stir together crust ingredients.

    In bottom of ungreased 9x13-inch (22x33 cm) pan, press mixture evenly. Bake 18 to 22 minutes or until light golden brown.

    Meanwhile, in same large bowl, stir together filling ingredients except lemon juice. Stir in lemon juice. Pour mixture over warm crust.

    Bake 23 to 28 minutes longer or until top is light golden brown.

    Cool completely, about 1 hour. Sprinkle with icing sugar.

    For bars, cut into 6 rows by 6 rows.

    Tip: After dusting with icing sugar, sprinkle with a little colored sugar for a festive touch or sprinkle with toasted flaked coconut.
