Thai Turkey Burgers with Red Curry Mayo

If you like burgers with "heat," try this red curry mayo-topped turkey burger!

Ingredients

  • 1/3 cup (75 mL) fat-free mayonnaise
  • 2 tsp (10 mL) Thai red curry paste
  • Finely grated peel of 1 lime
  • 1 tbsp (15 mL) lime juice
  • 1 tsp (5 mL) honey

  • 1 lb (500 g) ground turkey
  • 1/2 cup (125 mL) finely chopped dry-roasted peanuts
  • 1/3 cup (75 mL) chopped fresh cilantro
  • 3 tbsp (45 mL) chopped fresh mint
  • 2 tsp (10 mL) Thai red curry paste
  • Finely grated peel of 1 lime
  • 1 tbsp (15 mL) lime juice
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 4 hamburger buns, split
  • 4 leaves lettuce

    In small bowl, stir all Red Curry Mayo ingredients with whisk. Cover; refrigerate until serving time.

    Heat gas or charcoal grill. In large bowl, mix all burger ingredients except buns and lettuce. Shape mixture into 4 patties, 1/2 inch thick.

    Carefully brush oil on grill rack. Place patties on grill over medium heat. Cover grill; cook 9 to 12 minutes, turning once, until meat thermometer inserted in centre of patties reads 165ºF.

    Place burgers on bottom halves of buns. Spread tops of burgers evenly with Red Curry Mayo. Top with lettuce. Cover with top halves of buns.

  • Purchasing: Look for Thai red curry paste in the Asian-foods section of your grocery store.
  • How-To: To cook patties in a skillet, heat 1 teaspoon oil in 12-inch skillet over medium-high heat. Cook patties in oil 10 to 12 minutes, turning once, until deep golden brown and meat thermometer inserted in centre of patties reads 165F.
