Banana Bread Baked Oatmeal

This hearty fruit-filled version of oatmeal is a great way to serve overnight guests; it mixes up in five minutes. Recipe by Aaron Hutcherson.

Ingredients

  • 2 ripe bananas, mashed
  • 1 egg
  • 1 cup milk
  • 1 1/2 cups quick-cooking or old-fashioned oats
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Steps

    Heat oven to 375°F. Line 8-inch square (2-quart) baking dish with cooking parchment paper.

    In medium bowl, beat mashed bananas, egg and milk with whisk until smooth. Add oats, brown sugar, baking powder, cinnamon and salt; mix until evenly combined. Pour into baking dish.

    Bake about 30 minutes or until set.

Expert Tips

  • Tip 1
    Though the parchment paper helps for easier cleanup, it’s completely optional. A little cooking spray would work fine instead.
  • Tip 2
    Drizzle with a little honey, maple syrup or even caramel for an extra touch of sweetness.
