Glazed Spiced Pumpkin Bars

Pair the great taste of pumpkin with Fiber 1* original bran cereal in a spicy dessert bar.

Ingredients

  • 2 cups (500 mL) Fibre 1* Original Cereal
  • 1/2 cup (125 mL) canola or vegetable oil
  • 1/2 cup (125 mL) orange juice
  • 1 can (398 mL/ 14 fl oz.) pumpkin (not pumpkin pie mix)
  • 2 eggs
  • 1 1/2 cups (375 mL) all-purpose flour
  • 1 1/2 cups (375 mL) granulated sugar
  • 2 tsp (10 mL) baking powder
  • 1 tsp (5 mL) ground cinnamon
  • 1 tsp (5 mL) baking soda
  • 1/2 tsp (2 mL) ground ginger
  • 1/4 tsp (1 mL) salt
  • 1 cup (250 mL) chopped walnuts

  • 1 cup (250 mL) icing sugar
  • 4 to 6 tsp (20 to 30 mL) orange juice

    Heat oven to 350ºF. Spray 15x10x1-inch pan with cooking spray, or grease and flour pan. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).

    In large bowl, beat oil, 1/2 cup orange juice, the pumpkin and eggs with electric mixer on low speed until well blended. Stir in crushed cereal; let stand 10 minutes.

    Beat in remaining bar ingredients except walnuts on low speed until well blended. Stir in walnuts. Spread evenly in pan.

    Bake 35 to 40 minutes or until top springs back when touched lightly in center. Cool completely, about 1 hour.

    In small bowl, mix icing sugar and enough of the 4 to 6 teaspoons orange juice for desired drizzling consistency. Drizzle over bars. For bars, cut into 8 rows by 4 rows.
