Ingredients

  • 1 1/2 cups (375 mL) packed light brown sugar
  • 1/2 cup (125 mL) butter or margarine, softened
  • 2 eggs
  • 1/2 cup (125 mL) canned pure pumpkin (not pumpkin pie filling)
  • 1 tbsp (15 mL) vanilla
  • 2 3/4 cups (675 mL) all-purpose flour
  • 2 tsp (10 mL) baking powder
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) salt
  • 1/2 tsp (2 mL) ground ginger
  • 1/4 tsp (1 mL) ground nutmeg
  • 1/8 tsp (0.5 mL) ground allspice
  • 1/8 tsp (0.5 mL) ground cloves
  • Pinch ground cardamom
  • 1 1/3 cups (325 mL) finely chopped pecans
  • 1/2 cup (125 mL) chocolate baking chips
  • 3/4 cup (175 mL) white chocolate moulding wafers

Steps

  • 1
Heat oven to 350ºF. Grease cookie sheet with shortening or cooking spray, or line with parchment paper.
  • 2
In large bowl, beat brown sugar, butter, eggs, pumpkin and vanilla with electric mixer on medium speed. Stir in flour, baking powder and spices. Stir in pecans and baking chips. Drop dough by tablespoonfuls onto cookie sheet.
  • 3
Bake 10 to 14 minutes or until edges are lightly browned. Remove to cooling rack. Cool completely, about 30 minutes.
  • 4
In small microwaveable bowl, microwave white chocolate moulding wafers uncovered on Medium-High for 15 to 30 seconds. Stir. Continue in 15 to 30 second intervals, stirring each time until all the wafers are fully melted. The wafers will retain their shape until they are stirred. For easy drizzling, spoon the melted white chocolate wafers into a small food-storage bag. Snip off one tiny bottom corner and squeeze the melted chocolate over the cookies. Let stand until set.

  • Tip 1
Tip: Moulding wafers can be purchased at any bulk food store.
  • Tip 2
Tip: When buying canned pumpkin, check the label to be sure it is not pumpkin pie mix, which contains sugar and spices.
