Ingredients

8 cups (2 L) Rice Chex* Cereal
2 cups (500 mL) almonds
1/3 cup (75 mL) butter or margarine
1 tsp (5 mL) seasoned salt
1 tsp (5 mL) ground cumin
1 tsp (5 mL) ground coriander
1/2 tsp (2 mL) ground cinnamon
1 tsp (5 mL) dried mint leaves, if desired
1 cup (250 mL) chopped dried fruits, currants or raisins
1/4 cup (50 mL) finely chopped crystallized ginger
3 tbsp (45 mL) honey, if desired

    In large microwaveable bowl, mix cereal and almonds; set aside.

    In small microwaveable bowl, microwave butter on High about 40 seconds or until melted. Stir in seasonings. Pour over cereal mixture; stir until evenly coated.

    Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes, until mixture just begins to brown. Stir in dried fruits and ginger. Drizzle with honey. Spread on waxed paper to cool. Store in airtight container.

Expert Tips

  • Purchasing: Look for crystallized ginger in the produce area or with the spices or substitute with 1 tablespoon ground ginger.
  • OVEN DIRECTIONS: Heat oven to 250°F. In large bowl, mix cereals and almonds; set aside. In ungreased large roasting pan, melt butter in oven. Stir in seasonings. Gradually stir in cereal mixture until evenly coated. Bake 1 hour, stirring every 15 minutes. Stir in dried fruits and ginger. Drizzle with honey. Cool completely, about 15 minutes. Store in airtight container.
