Ingredients

  • 1 roll Pillsbury™ refrigerated sugar cookie dough
  • 2 tablespoons pumpkin pie spice
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 1 1/2 cups white chocolate molding wafers

Steps

    Heat oven to 350°F. Lightly spray baking sheet with cooking spray, or line with cooking parchment paper.

    Break up sugar cookie dough into large bowl; add pumpkin pie spice and canned. Beat with electric mixer on medium speed until blended.

    Scoop cookie dough into large tablespoonfuls 2 inches apart on baking sheet. Bake 8 minutes.

    Cool only 5 minutes before using clean hands to roll into balls. Refrigerate 15 minutes.

    In small microwaveable bowl, microwave white chocolate molding wafers uncovered on Medium-High for 15 to 30 seconds. Stir. Continue in 15 to 30 second intervals, stirring each time until all the wafers are fully melted. The wafers will retain their shape until they are stirred; use fork to dip balls into coating, tapping any excess off. Place on parchment-lined baking sheet to harden.

    Top pumpkin truffles with chopped pecans or toffee bits while coating is still warm for an extra-fun treat!

    Don’t overbake cookies; you’ll want to make sure they’re still soft so you can form them into truffles.
