Ingredients

  • 8 eggs
  • 1/2 cup (125 mL) diced provolone or mozzarella cheese
  • 1/2 cup (125 mL) frozen whole kernel corn
  • 2 tbsp (25 mL) chopped fresh chives
  • 2 tbsp (25 mL) chopped fresh parsley
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1/2 cup (125 mL) diced cooked ham
  • 1 tbsp (15 mL) butter or margarine

Steps

    In medium bowl, beat all ingredients except ham and butter with fork or wire whisk until well mixed. Stir in ham.

    In 10-inch nonstick skillet, melt butter over medium-low heat. Pour egg mixture into skillet. Cover; cook 14 to 17 minutes or until eggs are set in centre and light brown on bottom. Turn upside down onto serving plate.
