This simple recipe is a real crowd pleaser and it also makes a wonderful homemade gift at holiday time! Recipe by Melissa King.

  • 2 (250 g each) bags of dark chocolate chips (about 3 cups)
  • 1/4 cup shelled (roasted, salted) pistachios
  • 1/2 cup dried cherries or dried sweetened cranberries
  • 1 cup Cinnamon Chex™ cereal

    Spread a piece of parchment paper on the back of a cookie sheet, spray with nonstick cooking spray.

    In a large microwave-safe bowl, microwave your chocolate on 50% power for 3 minutes, stopping and stirring at each minute mark. When the chocolate is almost completely melted, stir vigorously until the rest of the chocolate melts together. (This is a shortcut for tempering your chocolate, leaving it glossy. If you overheat your chocolate it can become dull).

    Pour your melted chocolate onto your prepared parchment sheet, using an offset spatula to spread it into an even layer, approximately 1/4-inch thick.

    Sprinkle your pistachios, cherries and Cinnamon Chex™ cereal evenly over the chocolate. Place the cookie sheet with the chocolate bark into the fridge (make sure you have a clear shelf so it can sit level) for 25 minutes to set. If it’s completely solid, remove it from the fridge and snap the chocolate into large pieces.
