Enjoy a citrusy twist on regular cupcakes made with Betty Crocker™ SuperMoist™ cake mix – perfect for dessert.

Ingredients

  • 1 box Betty Crocker™ SuperMoist™ lemon cake mix
  • 3/4 cup (175 mL) water
  • 1/2 cup (125 mL) vegetable oil
  • 1/4 cup (50 mL) fresh lemon juice
  • 3 eggs

  • 1/4 cup (50 mL) presweetened lemonade flavour drink mix
  • 3 tablespoons (45 mL) water
  • 1/2 cup (125 mL) butter, softened
  • 2 tablespoons (30 mL) whipping cream
  • 3 1/2 cups (825 mL) icing sugar
  • 2 drops yellow food colour

  • Lemon slice gummy candies
  • 24 small drinking straws

Steps

    Heat oven to 350°F (180°C) (325°F/160°C for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups.

    In large bowl, beat all cupcake ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.

    Bake 18 to 20 minutes or until toothpick inserted in centre comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely

    In small bowl, stir lemonade mix and 3 tablespoons (45 mL) water until mix is dissolved. In large bowl, beat butter, whipping cream and lemonade mixture with electric mixer on medium speed 2 minutes or until creamy. On low speed, gradually beat in icing sugar and food colour until blended. Frost cupcakes. Garnish with gummy candies and straws.
