Peanutty Granola Cookies

Cake mix and granola bars speed up preparation of hearty cookies. The addition of peanut butter chips is terrific.

Ingredients

  • 1 pkg Betty Crocker* SuperMoist* Golden Cake Mix
  • 1/2 cup (125 mL) butter or margarine, softened
  • 2 eggs
  • 4 Nature Valley* Sweet and Salty Peanut Granola Bars, coarsely chopped
  • 1/2 cup (125 mL) peanut butter chips
  • 1 1/2 tsp (7 mL) shortening

    Heat oven to 350ºF (325ºF for dark or nonstick pan). In large bowl, beat cake mix, butter and eggs with electric mixer on medium speed until smooth. Stir in chopped granola bars. Onto ungreased baking sheet, drop mixture by tablespoonfuls.

    Bake 10 to 12 minutes or until set and light golden brown around edges. Let cool on baking sheet 2 minutes. Remove from baking sheet to cooling rack. Cool completely, about 30 minutes.

    In microwavable food-storage plastic bag, place peanut butter chips and shortening; seal bag. Microwave on High 15 seconds; squeeze bag. Microwave 15 to 25 seconds longer or until melted; squeeze bag until mixture is smooth. Cut off tiny corner of bag; squeeze bag to drizzle mixture over cookies. Let stand about 10 minutes or until drizzle is set. Store in airtight container.
