Ingredients

1 1/2 cups (375 mL) uncooked shredded sweet potato (about 1/2 potato)
1/2 cup (125 mL) sugar
1/3 cup (75 mL) vegetable oil
2 eggs
1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) whole wheat flour
2 tsp (10 mL) instant minced onion
1 tsp (5 mL) dried rosemary leaves, crumbled
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) baking powder
1 tbsp (15 mL) sesame seed

    Heat oven to 350°F. Grease bottom only of round pan, 9x1 1/2 inches, with shortening.

    Mix sweet potato, sugar, oil and eggs in large bowl. Stir in remaining ingredients except sesame seed. Spread in pan. Sprinkle sesame seed over batter.

    Bake 25 to 30 minutes or until toothpick inserted in centre comes out clean. Serve warm.

  • Tip: If you don't have a round pan, you can bake the bread in an 8x8x2-inch square pan.
  • Tip: Top off warm wedges of this savoury bread with Orange Butter. To make, beat together 1/2 cup softened butter, 1 teaspoon grated orange peel and 1 tablespoon orange juice. If desired, chill about 1 hour to blend flavours.
