Streusel Berry Muffins

Raspberries and blackberries burst with flavour in these sweet and easy streusel-topped muffins.

Ingredients

  • 1/4 cup (50 mL) whole wheat flour
  • 2 tbsp (30 mL) finely chopped toasted pecans or walnuts
  • 4 tsp (20 mL) butter or margarine, melted
  • 1 tbsp (15 mL) brown sugar
  • 1/4 tsp (1 mL) cinnamon

  • 1 cup (250 mL) whole wheat flour
  • 1 cup (250 mL) all-purpose flour
  • 1/2 cup (125 mL) granulated sugar
  • 1 tbsp (15 mL) baking powder
  • 1 tsp (5 mL) baking soda
  • 1/4  tsp (1 mL) salt
  • 1 1/4 cups (300 mL) Yoplait® Source® Greek Yogurt – Strawberry or Vanilla
  • 1/4 cup (50 mL) skim milk
  • 3 tbsp (45 mL) vegetable oil
  • 1 egg
  • 1/2 cup (125 mL) blackberries, cut in half
  • 1/2 cup (125 mL) raspberries

Steps

    Heat oven to 400ºF (200ºC).  Spray bottoms of 12 regular size muffin cups with non-stick cooking spray or line with paper baking cups.

    Combine streusel ingredients; set aside.

    Whisk together flours, sugar, baking powder, baking soda and salt in a large bowl; make a well in centre of mixture.

    In another bowl whisk together yogurt, milk, oil, and egg.
  • 5
    Pour yogurt mixture all at once into flour mixture; stir just until moist. Batter will be thick. Fold in berries.

    Divide batter evenly among muffin cups and sprinkle streusel mixture evenly over top of each.

    Bake 15 to 18 minutes until top springs back when touched and toothpick inserted in centre comes out clean.
