Here's another baking classic that belongs in everyone's recipe box. A clove-scented homemade frosting makes a good thing even better! ...MORE + LESS -

Ingredients

2/3 cup (150 mL) packed brown sugar
1/4 cup (50 mL) butter or margarine, softened
1/2 tsp (2 mL) vanilla
1 egg
1 cup (250 mL) all-purpose flour
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) ground cinnamon
1/2 tsp (2 mL) ground cloves
1 cup (250 mL) shredded zucchini, drained
1/2 cup (125 mL) chopped nuts

3/4 cup (175 mL) icing sugar
1 tbsp (15 mL) butter or margarine, softened
1/8 tsp (0.5 mL) ground cloves
3 to 4 tsp (15 to 20 mL) milk

    Heat oven to 350°F. Grease bottom and sides of 9- or 8-inch square pan. In large bowl, mix brown sugar, butter, vanilla and egg. Stir in flour, baking soda, cinnamon and 1/2 teaspoon cloves. Stir in zucchini and nuts. Spread in pan.

    Bake 25 to 30 minutes or until toothpick inserted in centre comes out clean. Cool completely, about 1 hour.

    In medium bowl, mix all frosting ingredients until smooth and spreadable. Spread frosting over bars. For bars, cut into 6 rows by 4 rows.

  • Simplify:In a hurry? Pick up a container of Betty Crocker* Whipped Cream Cheese Frosting rather than preparing the spice frosting. It's delicious and so quick!
  • Variation: Turn these fall favourites into Christmas bars! Sprinkle with red and green decorator sugar, and add 1/2 cup chopped dried cranberries to the recipe.
