Fajita Salad Wraps

Ingredients

  • 1 tbsp (15 mL) vegetable oil
  • 1 lb (500 g) skinless, boneless chicken breasts, cut into strips
  • 1 pkg Old El Paso* Smart Fiesta* Reduced Sodium Fajita Seasoning Mix
  • 1/4 cup (50 mL) water
  • 1 1/4 cups (300 mL) diced peppers (any colour)
  • 1 pkg Old El Paso* Smart Fiesta* made with Whole Grain Tortillas
  • Your favourite salad ingredients (lettuce, diced tomatoes, etc.)
  • Shredded reduced fat Cheddar cheese (optional)

Steps

    Heat oil in large non-stick skillet over medium-high heat. Add chicken; cook and stir 3 to 5 minutes until no longer pink inside.

    Stir in diced peppers, seasoning mix and water. Simmer uncovered 3 to 5 minutes, stirring frequently.

    Warm tortillas according to package directions.

    On each tortilla place chicken and pepper mixture and a combination of any of your favourite salad ingredients. Sprinkle with cheese, if desired. Fold up and enjoy.
