Mango-Lime Shortcakes

Ingredients

  • 2/3 cup (150 mL) Bisquick* Mix
  • 1 tbsp (15 mL) granulated sugar
  • 1 tsp (5 mL) grated lime peel
  • 2 tbsp (25 mL) skim milk
  • 2 tsp (10 mL) vegetable oil
  • 1 snack-size container (approx 4 oz/100 g) vanilla pudding
  • 1 tbsp (15 mL) lime juice
  • 1/2 tsp (2 mL) grated lime peel
  • 1/2 cup (125 mL) chopped mango
  • Whipped topping, optional

    Heat oven to 375ºF. Spray baking sheet with nonstick cooking spray. In medium bowl, stir Bisquick mix, sugar, 1 teaspoon lime peel, the milk and oil until soft dough forms. Drop dough by 2 spoonfuls onto cookie sheet.

    Bake 9 to 12 minutes or until golden brown. Cool 10 minutes.

    Meanwhile, in small bowl, mix pudding, lime juice and 1/2 teaspoon lime peel until well blended.

    Split warm shortcakes. Fill and top with mango and pudding mixture. Top with whipped topping.
