Marshmallow vodka finds its way into these delightfully fun boozy jello shots. Shaped like Lucky Charms™ marshmallows, this may be the most colourful way ever to celebrate St. Patrick’s Day!

Ingredients

  • 2 boxes (28 g each) unflavoured gelatin powder
  • 1 1/2 cups cold water
  • 1 1/2 cups boiling water
  • 1 cup sugar
  • 3 cups marshmallow vodka
  • 2 cup heavy cream
  • Food Colour Gel: pink, purple, green, blue, yellow, orange
  • 2 tablespoons Betty Crocker™ Creamy Deluxe™ vanilla frosting, tinted orange
  • 2 tablespoons Betty Crocker™ Creamy Deluxe™ vanilla frosting, tinted blue
  • 2 tablespoons Betty Crocker™ Creamy Deluxe™ vanilla frosting, tinted pink
  • 2 tablespoons Betty Crocker™ Creamy Deluxe™ vanilla frosting, tinted yellow
  • Nonstick baking spray

    Spray 8 mini loaf tins with nonstick oil spray. Gently wipe the spray so it leaves only a thin layer, but does not pool around the edges of the loaf tins.

    In a large bowl, sprinkle gelatin over cold water and allow to sit for 1-2 minutes. Add boiling water and sugar, whisk quickly until it completely dissolved, about 3 minutes. Add vodka and whisk another 1-2 minutes. Then whisk in cream.

    Transfer 1 cup of the mixture to each of 6 small bowls. Tint each bowl with the following:

    Light pink (will be cut into hearts)

    Dark pink (will be cut into spades)
  • 6
    Light blue (will be cut into moons)

    Light purple (will be cut into horseshoes using a teardrop-shaped cutter)

    Light green (will be cut into shamrocks)

    Dark yellow (will be cut into stars)

    Leave the other 2 cups of the mixture un-tinted white. Pour 1 cup of prepared gelatin into each of the 8 prepared loaf tins. You should have 2 white coloured tins, and 1 tin of light pink, dark pink, light blue, light purple, light green and dark yellow. Refrigerate until set up, about 60 minutes.

    Cut each colour into its coordinating shape. Use a sharp knife to cut one of the white batches into squares. Pipe an orange bow (like a gift) onto each square.

    Cut the second white batch with the teardrop-shaped cutter. Slice the tip off of each piece with a sharp knife, leaving half-circle shaped pieces. Pipe pink, blue, and yellow frosting onto each half-circle, creating little frosting rainbows.

    Refrigerate until ready to serve. Enjoy!
