Mushroom Pecan Appetizers

Ingredients

  • 2 tbsp (25 mL) butter
  • 1 pkg (227 g) sliced fresh mushrooms (about 3 cups)
  • 1 cup (250 mL) chopped onions
  • 2 cups (500 mL) shredded Swiss cheese
  • 1 cup (250 mL) chopped pecans, toasted
  • 1 box frozen chopped spinach, thawed, squeezed to drain
  • 3 eggs
  • 1 1/3 cups (325 mL) milk
  • 3/4 cup (175 mL) Bisquick* Mix
  • 1 tsp (5 mL) garlic powder
  • 1/4 tsp (1 mL) salt

    Heat oven to 400ºF. Spray 13x9-inch pan with nonstick cooking spray. In large skillet, melt butter over medium heat. Add mushrooms and onions; cook about 5 minutes, stirring occasionally, until onion is tender. Drain.

    In pan, mix mushroom mixture, cheese, pecans and spinach; spread evenly. In medium bowl, stir all remaining ingredients with whisk or fork until blended. Pour into pan.

    Bake 25 to 30 minutes or until knife inserted in centre comes out clean. Cool 30 minutes before serving.

  • Tip 1
    Tip: Place the thawed spinach between several layers of paper towels. Then roll and squeeze the paper towels to remove excess moisture from the spinach.
