Ingredients

  • 6 slices bacon, chopped
  • 4 boneless skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup shredded sharp Cheddar cheese (4 oz)

    Heat 12-inch nonstick skillet over medium heat. Add bacon; cook 7 to 9 minutes, stirring frequently, until crisp. Using slotted spoon, transfer to paper towel-lined plate; set aside. Drain and discard all but 1 tablespoon drippings from skillet.

    Rub chicken with salt and pepper. Heat skillet with reserved drippings over medium heat. Add chicken; cook uncovered 14 to 16 minutes, turning once, until juice of chicken is clear when centre of thickest part is cut (at least 165°F). Remove from heat; top each breast with 1/4 cup cheese. Cover skillet; let stand 4 to 5 minutes or until cheese melts. Top with bacon, and serve.

    You can use precooked bacon; just add 1 tablespoon vegetable oil to skillet, and make chicken as directed in recipe.
