Ingredients

  • 3 cups (750 mL) Honey Nut Chex* Cereal
  • 3 cups (750 mL) Rice Chex* Cereal
  • 1 cup (250 mL) walnut pieces
  • 1/2 cup (125 mL) packed brown sugar
  • 1/4 cup (50 mL) butter or margarine
  • 1 tsp (5 mL) ground cinnamon
  • 1/2 tsp (2 mL) ground ginger
  • 1/2 tsp (2 mL) ground nutmeg
  • 2 cups (500 mL) dried or freeze-dried apples, coarsely chopped
  • 1 cup (250 mL) white chocolate moulding wafers

    In large microwaveable bowl, mix cereals and walnuts.

    In 2-cup microwaveable measuring cup, microwave brown sugar, butter, cinnamon, ginger and nutmeg uncovered for about 1 1/2 minutes, stirring after 1 minute, until smooth and bubbly. Pour over cereal mixture; stir until evenly coated.

    Microwave uncovered on High 4 minutes, stirring after each minute. Spread on waxed paper or foil to cool. Sprinkle apples evenly over cereal mixture.

    In small microwaveable bowl, microwave white chocolate moulding wafers uncovered on Medium-High for 15 to 30 seconds. Stir. Continue in 15 to 30 second intervals, stirring each time until all the wafers are fully melted. The wafers will retain their shape until they are stirred. Drizzle over cereal mixture; let stand until set. Break into bite-size pieces. Store in airtight container.

    How To : For easy drizzling, spoon the melted white chocolate wafers into a small food-storage bag. Snip off one tiny bottom corner and squeeze the melted chocolate moulding wafers over the cereal mixture.

    Substitutions : Replace the walnut pieces with chopped pecans or your favourite nut combination. Replace the dried apples with other dried fruits, like raisins, cherries, or cranberries.

    Purchasing : White chocolate moulding wafers are easily found at any bulk food store.
