Chicken Salad Taco Bowl

This delicious kid-friendly salad is a perfect way to use up leftover chicken.

Ingredients

  • 1/4 cup (60 mL) cooked chopped chicken
  • 2 tbsp (30 mL) diced apple
  • 2 tbsp (30 mL) diced celery
  • 1 tsp (5 mL) raisins
  • 2 tbsp (30 mL) plain Greek yogurt
  • 1 tsp (5 mL) grainy mustard
  • Pinch each salt and pepper
  • 1/4 cup (60 mL) shredded romaine lettuce
  • 2 Old El Paso™ Mini Tortilla Bowls

Steps

  • 1
    In bowl, toss together chicken, apple, celery and raisins; stir in yogurt, mustard, salt and pepper.
  • 2
    Heat bowls according to package directions. Divide lettuce evenly between tortilla bowls; top with chicken salad.

  • For a healthy lunch, serve with grapes.
  • Substitute low-fat mayonnaise for yogurt if desired.
