Build-Your-Own Microwave Mug Cobbler

No need to turn on the oven! Make a fruity summertime cobbler treat right in the microwave. Recipe by Annalise Sandberg.

Ingredients

  • 1/2 cup fruit (blueberries, strawberries, peaches, etc.), chopped if necessary
  • 2 tablespoons sugar
  • 1/4 cup Original Bisquick™ mix
  • 1/8 teaspoon ground cinnamon, if desired
  • 1/2 teaspoon fresh grated lemon or orange peel, if desired
  • 1 tablespoon nuts (pecans, almonds, walnuts, etc.), chopped, if desired
  • 1 tablespoon old-fashioned oats, if desired
  • Coarse sugar, for sprinkling, if desired
  • 1 tablespoon milk

Steps

    In microwavable mug, mix fruit and 1 tablespoon of the sugar.

    In small bowl, mix Bisquick™ mix, remaining 1 tablespoon sugar, and any of the "if desired" ingredients. Add milk, and stir until a thick dough forms. Drop dough in clumps over fruit in mug.

    Microwave uncovered on High 90 seconds to 2 minutes or until fruit bubbles to top of mug. Cobbler will be very hot; wait 5 minutes before serving. Top with whipped cream or ice cream, if desired.

  • Tip 1
    Do not fill your mug more than two-thirds full, or it will bubble over. You may need to adjust this recipe slightly to fit your mug.
  • Tip 2
    For easy cleanup, place mug on plate in microwave to catch any juices that bubble over.

    Microwaves vary; adjust cooking time as needed.
