Blueberry-Lemon Cheerios™ Mini Muffins

These easy mini muffins combine whole grain oats from Cheerios™ with fresh blueberries for a perfect snack.

Ingredients

  • 1 1/3 cups (325 mL) Cheerios™ cereal, finely crushed
  • 3/4 cup (175 mL) all-purpose flour
  • 1 1/2 tsp (7 mL) baking powder
  • 1/4 tsp (1.25 mL) salt
  • 1/2 cup (125 mL) milk
  • 1/3 cup (75 mL) honey
  • 1/4 cup (50 mL) butter, melted
  • 1 egg
  • 1 tsp (5 mL) finely grated lemon peel
  • 3/4 cup (175 mL) fresh blueberries

    Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray, or place paper baking cup in each muffin cup.

    In medium bowl, mix cereal, flour, baking powder and salt; make a well in middle of cereal mixture. In small bowl, mix milk, honey, melted butter, egg and lemon peel; beat with whisk to completely combine. Add liquid mixture to cereal mixture, and stir until just combined; batter may be lumpy. Stir in blueberries. Divide batter (about a heaping tablespoon each) evenly among muffin cups.

    Bake 11 to 13 minutes or until toothpick inserted in center comes out clean. Immediately remove from pans to cooling racks. Serve warm or cool.

    Place cereal in resealable food-storage plastic bag, and roll with rolling pin to crush without a mess.

    One medium lemon yields 2 to 3 teaspoons finely grated lemon peel.
