Spicy Jicama and Orange Salad (Gluten Free)

Jicama is a crunchy root vegetable with a sweet, nutty flavour that’s popular in Mexican cuisine. Its pretty ivory colour does not become discoloured, which makes it a natural to use in salads like this one.

Ingredients

  • 2 tbsp (30 mL) plain low-fat yogurt
  • 1 tbsp (15 mL) white wine vinegar
  • 1 tbsp (15 mL) honey
  • 1 1/2 tsp (7 mL) Dijon mustard
  • 1/2 tsp (2 mL) chili garlic paste
  • 1/4 tsp (1 mL) ground cumin
  • 1/8 tsp (0.5 mL) salt
  • 1/8 tsp (0.5 mL) ground coriander
  • 1/8 tsp (0.5 mL) pepper

  • 1/2 lb (250 g) jicama, peeled, cut into julienne strips
  • 1/2 English (seedless) cucumber, cut into julienne strips (about 1 cup/250 mL)
  • 4 oranges, peeled, sectioned
  • 1/2 bunch fresh cilantro, chopped (1/2 cup/125 mL)

Steps

    In large bowl, beat Dressing ingredients with whisk.

    Add jicama, cucumber and oranges; toss to coat. Let stand at room temperature about 30 minutes to blend flavours.

    Top with cilantro.
