Here’s a fresh way to get more veggies into your dinner.

Ingredients

  • 1 lb (500 g) lean ground beef
  • 1 teaspoon Greek seasoning
  • 2 1/2 cups Original Bisquick™ mix
  • 1 cup milk
  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/4 cups chopped English cucumber
  • 1 1/4 cups chopped tomatoes
  • 1/4 cup Italian dressing
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Plain Greek yogurt, if desired

Steps

  • 1
Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in Greek seasoning.
  • 2
Meanwhile, in medium bowl, stir together Bisquick™ mix and milk until soft dough forms. Pour and spread in baking dish. Spoon beef over dough.
  • 3
Bake 14 to 16 minutes or until golden brown. Sprinkle with mozzarella cheese. Bake 2 to 3 minutes or until cheese is melted.
  • 4
Meanwhile, stir together cucumber, tomatoes and dressing.
  • 5
Spoon cucumber mixture evenly over mozzarella cheese. Sprinkle with feta cheese. Sprinkle with chopped fresh parsley, and serve with a dollop of yogurt.

  • Look for the Greek seasoning near the spices, dried herbs and seasonings in your supermarket.
  • What is an English cucumber? An English cucumber is the long skinny cucumber that comes wrapped in plastic and is unwaxed. It is usually sweeter and less bitter than a regular cucumber and has a more tender skin.
