Easy Leftover Turkey Fajitas

“You Mexi-Can” turn your leftover turkey or chicken into these delicious and easy-to-make fajitas!

Ingredients

  • 1 tbsp (15 mL) vegetable oil
  • 1 bell pepper, thinly sliced (any colour)
  • 1 red onion, thinly sliced
  • 3 1/2 cups (875 mL) cooked turkey or chicken, cut into bite-size pieces or strips
  • 1 pkg (470 g) Old El Paso* Original Fajita Dinner Kit
  • 1 can (127 mL) Old El Paso* Chopped Green Chilies (optional)
  • Shredded Cheddar cheese
  • Sour cream

Steps

    Heat oil in large skillet on medium-high heat.  Add peppers and onions; cook and stir about 2 minutes.

    Reduce heat to medium and add cooked turkey and seasoning mix and fajita sauce from the kit.  Cook and stir 3 minutes longer.  Stir in chilies (if using) and cook until heated through.

    Warm tortillas as directed on package.  Spoon some turkey fajita mixture on top of each tortilla and top with shredded cheese and sour cream.  Roll up or fold over and serve immediately.

    Tip: If you don’t have any leftover turkey or chicken you could cut up a deli chicken or buy packaged fully cooked turkey or chicken strips.
